The grapes were gently hand-picked before dawn to ensure that cold fruit arrives at the winery, and then sorted by hand before being slowly destemmed into an open top tank. We leave the skin in contact with the juice (essential for color extraction) for 14 days before being the wine is drained to 100% French oak barrels. The wine was racked once in the spring and aged over 16 months before being bottled
