The grapes were gently hand-picked before dawn to ensure cold fruit arrives at the winery, where it was whole-cluster pressed. We cold settled and racked the juice before fermenting it in French oak barrels. After fermentation the wine sat on the lees and was stirred every two weeks. The wine underwent full malolactic fermentation to soften the higher acids. Aged over 16 months then minimally fined and filtered just prior to bottling.

Lemon cheesecake, floral, and spiced apple cider aromas escape from the glass at the first swirl. Higher tones of tropical fruit and citrus rinds become prominent as the wine opens up. The wine is bright and refreshing on the entry, yet the lush texture and minerality on the finish is the hallmark of this wine. Cantaloupe and green apple flavors give way to a crisp, clean finish of pear and toasted pine nuts.Winemaker Brandon Lapides
